In my past post about Create A Meals, I talked about how our family takes random items and throws them together into a delicious meal, giving them a strange name. This one happened because of a recipe we had planned to make called Mushroom and Onion Quinoa. Unfortunately, I had forgotten to pick Quinoa up at Target, so on the way home, I stopped by Winn-Dixie right by our house. Could not find it.

Upon coming home, my brother (who was in charge of dinner that night), decided to make some changes to the recipe by changing the Quinoa to Orzo, and adding sausage (and his own flair). The result was this yummy concoction!


MOSO (Mushroom, Onion, Sausage, and Orzo) 

feeds 7ish


2 packages of sausages or brats, sliced in pieces

1 16oz box orzo

1 32 oz box chicken broth

2 small onions, chopped

2 carrots, shredded

2 small bell peppers, chopped

1 package mushrooms, sliced

1/2 tsp dried Thyme

1/2 cup water

olive oil

salt and pepper, to taste


– Coat a medium saucepan with oil. Add onion and cook until soft. Add sausages and cook until lightly seared.

– Add other vegetables and dry spices and simmer for 2 minutes. Add water and simmer another 2 minutes.

– In the meantime, cook Orzo in the chicken broth in a large saucepan over medium heat until tender and the liquid has reduced a little.

– Once the orzo is done, add vegetables to it and simmer another 5 minutes.
